Söderberg is a Scandinavian bakery and coffee company with whom we have enjoyed a longstanding working relationship. Following the success of their locations at Quartermile including Soderberg Pizza, we worked closely with the client to develop a series of smaller neighbourhood bakery shops across Edinburgh, each designed to serve its local community while maintaining a strong and recognisable brand identity.

Each shop incorporates a consistent set of design principles and signature features that place it firmly within the Söderberg family, while responding individually to the character, opportunities and constraints of its existing building. The designs have evolved from project to project, building on lessons learned from earlier stores while introducing new ideas, materials and spatial refinements.

The interiors are defined by a restrained material palette influenced by Scandinavian design, including concrete and glass servery counters, warm natural oak flooring and furniture, and simple tiled finishes. Our role included developing the layout, securing statutory consents, and designing lighting, bespoke fixed furniture and display shelving throughout.

For the Stockbridge and Morningside shops, we designed new shopfronts that reconfigured the entrances and incorporated oversized oak sash windows, allowing the frontages to open up with bench seating behind, connecting customers more directly to the street.

The Stockbridge project involved a more substantial reworking of an earlier café layout that had been poorly configured, with a basement stair cutting across the frontage and disconnecting the interior from the street outside. We completely reconfigured the layout and introduced a new staircase arrangement to reactivate the shopfront, improve natural light deep within the space, and create a stronger visual connection between the bakery and the surrounding streetscape. The result is a brighter, more welcoming environment that draws people in while allowing those inside to engage with the life of the street beyond.
